I took (what I feel was) a big risk cooking my roast in the Instant Pot and the results were absolutely unexpected! I have always seared the roast and cooked it in the crockpot. This method of cooking seemed like a waste of a perfectly good chunk of beef! I decided to take the risk and was so nervous the whole time it was cooking. The flavors blew me away and over all, I am super grateful I took the risk! It was nearly as good as a good long slow cook, but not quite to that level. A good fall apart roast from the crock pot is a 10/10. This roast 9/10, easy!

There's a lot to learn and know when it comes to picking a good roast, but there is one GOLDEN RULE ABOVE ALL RULES THAT HAVE EVER BEEN. Fat marbling. You want a good amount of marbling through out the roast. The best cut of roast for this is a Beef Chuck Roast. Good marbling will ensure that the beef is tender, juicy and packed with a savory flavor. If there is no marbling, there will be no moisture. It will be dry and chewy. Neither of those qualities are something you want in a roast. Good marbling is the golden rule of fall apart roast beef! In fact I think its the "Goldest" of Golden Rules!

Picking the right cut of beef depends on what you plan to do with it. If you are planning to make a nice, juicy roast beef, you will need a well marbled chuck roast. If you are wanting to slice the beef into thin slices, go for a medium marbling. If you are looking for tender meat that will work with a tighter budget, medium marbled roasts are a great option. This recipe has quite a few side dish options but not a lot of substitutions for ingredients (its such a simple recipe, not many ingredients are needed). SUBSTITUTIONS:
  • Yellow onion can be subbed with any onion
  • You can DIY the Lipton Onion Soup mix
    • 3/4 c dried minced onions
    • 4 beef bouillon cubes, crushed into powder
    • 1 Tbsp onion powder
    • 1 tsp onion salt
    • 1/4 tsp celery seeds
    • 1/4 tsp sugar
    • 1/4 black pepper
    • 1/3 tsp paprika
    • 1/3 tsp sea salt
  • Beef broth can be substituted with beef bone broth
  • Cream of mushroom can be swapped with cream of celery if you're really in a pinch.
