Purple Coleslaw

 This little number came together when I had the thought, "I have so much extra cabbage... what do I do with it?". Then the idea came "COLESLAW! Wait..... Coleslaw is mostly green cabbage, this is purple cabbage....I'll Google it". Wouldn't you know, there is purple coleslaw! I read through dozens of recipes and then decided I was going out on my own and crossed my fingers! IT.TURNED.OUT.SO.GOOD. I was absolutely shocked! I ate quite a few bites of the cabbage before it even made it to the fridge. Not only is it beautiful, it is packed with nutrients and fiber! This was a great addition to a family BBQ, and a few summer lunches and picnics! I fully plan to make it in the winter when I am craving warmer days. Its just so light and bright and fresh and just, all the things *sigh*.

Ok, I can tell that I have sold you on this tasty number! Lets make sure you have what you need in the cupboard first! Here is your handy dandy shopping list!

I highly recommend using the ingredients listed on the recipe, however I have thought many times that I was prepared and ended up forgetting something. So here's a little something to help with that!

SUBSTITUTIONS:

  • Red Cabbage can be swapped for green cabbage
  • Apple Cider Vinegar can be replaced with rice wine vinegar. Second best replacement is champagne vinegar and a third option is white vinegar. Apple cider vinegar carries a sweetness that just can't be replicated, but these options will work in a pinch!
  • Carrots can be replaced with squash, parsnips, jicama, or zucchini.
  • Green onions can be swapped with Trader Joes Onion Salt (2 tsp) or onion powder and parsley (1 tsp each). Dried chives can work as well (1.5 tsp).
  • Mayo can be switched with miracle whip, HOWEVER, this will really sweeten your coleslaw and might be too much. So if you are using miracle whip, do half miracle whip and half plain Greek yogurt. Greek yogurt can be used as well. If you feel like its too sweet, you can add in some more cabbage and carrots and lightly salt and pepper. You can also sub the parsley with the options below to help with undesired sweetness.
  • If you don't have parsley you can use arugula or basil. Both will add savory notes and not sweet.

  • Deli Sandwiches
  • Fried Chicken

Even the children enjoyed it! It was a hit at every meal and has been requested again and again. This should last about 4-5 days in the fridge. The longer it sits, the more luster is lost. It's never had the chance to last that long at my house, its gone in 1-2 days. If it's taken to a pot luck, its gone faster than Taylor Swift tickets.

** A personal recommendation is to add a little to your BBQ'd burgers and or hotdogs for a little something extra. You're welcome!**
