The one thing I will never know about this appetizer is its shelf life in the fridge. It is inhaled with in 2-3 days. This is a dip that is usually paired with tortilla chips, sprinkled on a taco salad or added to a simple taco! My personal favorite is the hint of lime tortilla chips. They are PERFECTION with this caviar! 

We take this to Super Bowl parties, BBQs, potlucks, picnics and when we go camping. It travels well and the longer it can sit and let the flavors fuse, the yummier it is!

Because its so bright and colorful, kiddos are drawn to it and most really like it! This helps get some of those picky eaters some nutritious veggies!

First things first, lets make sure you have the ingredients you will need!

One kitchen item I highly recommend is a food chopper. It's a game changer and time saver! I have one just like THIS. I have made this using the food chopper and without it and I most definitely prefer using the food chopper! If you don't have a food chopper, its most definitely worth the time it takes to dice everything! The only food item I would dice by hand is the onion, so that it is really finely diced. 

I have mentioned in other recipes that I remove the seeds and membranes from the jalapenos to cut down on the spice. It's a good thing to remember if you want the flavor and not the spice!

The cilantro flavor can really get strong with all the vegetables, so start small, really small, because you can always add more!

The oil and vinegar you use are just to coat everything. You don't need to have a puddle of oil and vinegar surrounding everything. just make sure all the little pieces are good and coated!

The best chips to use (in my ever so humble opinion 😉) are the Tostitos Hint of Lime chips.

SUBSTITUTIONS: There are some ingredients in this recipe that just can not be substituted because it brings an unflattering flavor to the dish as a whole. Below are ingredients that can be safely and (most importantly deliciously) substituted.
  • Bell Peppers. You can use green bell peppers if you're in a pinch. They don't hold the same sweetness that a red, orange or yellow pepper would, but they are still very tasty!
  • Beefsteak Tomato can be replaced with diced roma tomatoes, quartered cherry tomatoes, or any other tomato. The recipe includes beefsteak tomatoes because using just one is the perfect amount and they don't get mushy as quickly. 
  • Black beans can be replaced with navy beans or great northern.
  • Chili powder, cumin and coriander can be swapped with 2 tsp of taco seasoning. 
  • White wine vinegar can be subbed with red wine vinegar. 
  • Lime can be swapped with lime juice concentrate, 1 tsp.
